Natural Honey

Natural Honey is a sweet, viscous food substance produced by bees and some related insects. Bees produce honey from the sugary secretions of plants (floral nectar) or from secretions of other insects such as honeydew). They do this by regurgitation, enzymatic activity, and water evaporation. Honey is stored in wax structures called honeycombs.

Honey gets its sweetness from the monosaccharides fructose and glucose, and has about the same relative sweetness as sucrose (granulated sugar). It has attractive chemical properties for baking and a distinctive flavor when used as a sweetener. Most microorganisms do not grow in honey, so sealed honey does not spoil, even after thousands of years.

We procure honey from naturally-occurring wild bees found within the Western Ghat at Sahyadri Hills in Kolhapur District.  It means that neither the hives nor the free-range bees have ever been expressed to pesticides, pollutants, genetically modified crops or antibiotics. We are proud to say that our honey is totally chemical free.

Western Ghat in Maharashtra State is one of the most sensitive hots pots of Biodiversity in the World. Out of 4000 species of floral plants found in Western Ghat 1500 (38%) are endemic (not found in other part of world) to this region. It is a UNESCO World Heritage Site and is one of the eight “hottest hot spots” of biological diversity in the world. It is sometimes called the Great Escarpment of India.
